Ingredients

  • 4 cup dashi broth
  • 0.25 cup white miso paste
  • 1 tbsp chili paste
  • 4 ounce enoki mushrooms, trimmed
  • 0.25 cup scallion, sliced
  • 0.25 tsp red pepper flakes

Steps

  1. Bring dashi broth to a gentle simmer.
  2. Whisk miso paste and chili paste with a little hot broth; stir back into the pot.
  3. Add enoki mushrooms; heat gently without boiling until mushrooms soften.
